Rural Method Medium Sweet Fine Cider

A rural method, late season, cider blended around Ashton Brown Jersey that is becoming a regular blend for Sam & Beccy. The varieties selected in this cider also feature Dabinett, Vilberie, and several unidentified late dessert apples (russets and non-russets).

Wild fermented in stainless steel and continually cold racked, to slow down and remove the active yeasts, until it can be bottled with residual sweetness. This cider is full of tropical fruit, ripe apple, orange flesh. Tannin is ripe, slightly woody and bitter, complex. Very drinkable.
