Shedletsky's Curtido
Curtido is a fermented cabbage dish from El Salvador. Think of it as a Central American sauerkraut. Shedletsky's take crisp white cabbage and ferment it for at least 18 days in a spicy brine packed full of lime and fresh chillies. They add Mexican oregano for a distinctive and addictive taste.
Their curtido is unpasteurised and additive-free for an amazing taste and loads of health benefits.
STORAGE: Keep your curtido in the fridge. It will last up to 6 months. Over this time, your curtido will continue to ferment, becoming more sour and less spicy. This is natural. It also produces CO² as it ferments. “Burp” your jars regularly by opening the lid to release the excess gas.
