Exactly as it sounds, this is a pork belly cut into 1cm thick strips to be quick to cook, absolutely incredible on a BBQ, because this cut is fatty it can take a heavy spice or marinade.
 
The Ethical Butcher source their pork as carefully as they source all of their meats, in that they find animals that have had a natural life where possible also performing vital land management roles such as forest clearing. The terms ‘free range’ and ‘outdoor reared’ do not have clear legal definitions and do not necessarily meet thier requirements. They visit every farm they source from to ensure that the highest possible standards of welfare are used throughout the entire life of the animal.
 
Traditionally cured using salt sugar, sodium nitrate, sodium nitrite and sodium ascorbate (a salt of vitamin C)
